With about 30 minutes of prep time covering a nine-pound fresh ham with a rub made of sage sprigs, kosher salt and cracked pepper – you’ll score the ham with a knife and tie it up with butcher’s twine. Brush it with a small bit of oil and season with the rub.
Smoke your ham for about five hours using a handful of wood chips. We recommend trying a fruit wood, such as apricot or pear. Rockford Ace has a whole aisle of wood chip selections! Place a foil pan beneath the ham to catch the drippings. It will sit in the grill set for indirect cooking over low heat, 250 – 350 F), keeping the lid closed for four hours. About each hour you’ll add another handful of wood chips to the smoker box.
When the ham is finished (be sure to check the meat temp with a thermometer) you’ll give it a sweet glaze of maple syrup, which we have available in store currently as well. Maple syrup comes in two grades, and the Grade B (or Grade 2) is darker and stronger and thicker – very suitable for grilling and smoking!
